Victoria Boutenko, author of the wonderful book Green for Life, participated in a medical study which demonstrated that when ordinary Americans of any age start with one quart of green drink per day and, within 30 days, their stomach acid has returned almost to youthful levels.

While humans may not be strictly herbivores, we can take a hint from Nature. From greens, believe it or not, we can get all our protein and other nutrients – provided you chew them long enough to break down all the cellulose. Today, we don’t have all day long to spend chewing, like the herbivores.  The solution is green drinks – everyone agrees they are good to have one first thing in the morning. All day long, that way, they feel more inclined to eat healthy food.

While it is good to invest in a powerful, high-speed blender (which breaks down the cellulose in which the protein and other nutrients are encased),  any ordinary blender can work – provided you use softer greens, and don’t blend too much at one time.

The preferred blender in the raw food community is the Vita-Mix. Star Restaurant Supply in Van Nuys has new Vita-Mix machines for about $300.00.

People who have eaten a high percentage of raw food for some months will  tell  you that  they are eating less, with more satisfaction, than when their diet was mostly cooked food.
